Borough Market traders Wild Beef West Country Farm Shop is a one-stop shop if you’re looking for ethically produced poultry, game, meat, condiments and gift ideas this festive season.

The farm shop’s free range Mammoth Bronze turkeys are reared on 1,200 acres of meadows and orchards in Devon. Slow grown to full maturity on a completely natural diet, the birds are prepped and plucked by hand. Each bird is hung for a minimum of 10 days to develop the fine, sweet flavour particular to this breed.

For alternatives to turkey, they also have Devonshire goose, duck and pigeon breast; packed with gamey flavour, the pigeon breast is shot locally and prepped and vacuum sealed in fours within twelve hours for incredible freshness.

For a feast of plenty, the Wild Beef sirloin and undercut is ideal for a grand affair, catering for a party of 20. Enjoy a T-bone fillet on one side and the succulent sirloin on the other. Meanwhile, a rib on the bone also presents a mouth-watering centrepiece for a social gathering. Other seasonal specials include gammon joints, pork belly and rabbit.

People hunting for gifts for their foodie friends and family can also make up hampers in-store.

Christmas and New Year’s Eve orders should be placed by the end of November. Orders can be collected from one of the three farmers’ market locations – Borough and Broadway, in London, and Wells, Somerset – or can be couriered directly to your door.

The fluffy stuff

Marshmallows have had a makeover with Louisa Cefaz’ new gourmet marshmallow line Fluffy Puffs. With flavours including key lime pie, caramel slice and orange swirl, the science graduate said she set out to learn the science behind baking when she designed the delicacies.

“There’s a huge gourmet marshmallow market in America. I did experiments and came up with weird creations. I had to teach myself how to make them and get the sugar syrup to the correct temperature so that it wouldn’t crystallise,” the 28-year-old explains.

With biscuit bases and resembling more of a slice or biscuit, the marshmallows are based around classic desserts. “I love key lime pie so I tried to replicate that. The gingerbread base gives it a fiery taste and I added a lot of pure lime oil and juice for a tart, strong flavour,” Louisa tells.

The marshmallow-maker uses natural fruit, including blackcurrants and raspberries, lemon and lime juices and pure citrus oils for a strong flavour. “I only have one bite to get the customer in, so I wanted it to be flavourful,” she says.

Fluffy Puffs are £4 for nine gourmet marshmallows.

Winning brownie points

It was a love of brownies that lead Maria Mannoukas to set up her Sweet Tooth Brownie Bar, and it’s catching on. “We are trying to change the way people think to don’t take a cake to a party…. take brownies,” she explains.

Among Maria’s different flavours are a cocktail range including the Mojito brownie and the Pina Colada. The classic plain brownies are stocked at General Store, 174 Bellenden Road, SE15 4BW and Hop Scotch in Honor Oak. The brownie baker also has new DIY brownie 1 litre jars that contain all the ingredients people need except for butter and eggs.
